Spinach and Mushroom One Pot Meal

This one pot meal is rich, healthy, nourishing and a perfect choice for days when you are flushed with work and have no time on your hands to cook an elaborate meal,

Cook time: 15 Minutes

Servings: 1


Ingredients:

  • 1 small bowl of chopped mushroom

  • 1 small bowl of chopped spinach

  • 100 grams of Spaghetti

  • 2 tablespoons of butter

  • 2-3 tablespoon of chopped coriander

  • 2 tablespoon of dried herbs of your choice (I use oregano and dried chili for this recipe)

  • 2-3 cloves of garlic (chopped)

  • Salt and pepper to taste

  • Shredded cheese

Instructions:

  1. Put the mushroom, spinach, spaghetti and coriander in a pot. Add some water to it and simply let it simmer. Remember not to put in too much water, but just enough to get the ingredients cooked and the pasta to be "al-dente"

  2. Once everything softens down and gets cooked, finish off by adding the butter, garlic, salt and pepper and the dried herbs

  3. Add the shredded cheese for garnishing


What is "al-dente"?

Literally translated as 'to the tooth', "al-dente" is an Italian term used to describe the ideal consistency of pasta (and rice) when cooked. Which means that the rice or pasta will be tender but not mushy.


Can you make this recipe with rice?

Absolutely! This recipe can be altered to include rice, pasta or even quinoa (which makes it more healthy) instead of spaghetti. For rice and quinoa you might want to add a little more water in case you like the consistency to be like that of a porridge.
